Chocolate Upside-Down Cupcakes
Serves 24; 1 cupcake per serving
A delectable dessert treat to top-off the tastes of Oktoberfest!
1
box German chocolate cake mix
1 (12-ounce) can evaporated milk
1 cup sugar
2 egg yolks, lightly beaten
4 tablespoons butter
2 ounces German sweet chocolate
2 cups flaked (or shredded) coconut
1 cup chopped pecans
24 toasted pecan halves
Prepare
cupcakes according to package directions on cake mix box (yield equals 24
cupcakes). Remove cupcakes from pan and allow to cool on a wire rack. In a
medium saucepan, whisk together evaporated milk, sugar, egg yolks, and butter.
Cook over medium heat, whisking often, until butter melts, about 2 to 3 minutes.
Continue to cook on medium heat for 12 minutes, stirring often, until mixture is
thickened and slightly golden. Remove from heat, add chocolate, and stir until
chocolate is melted. Stir in coconut and chopped pecans. For presentation,
lightly dust a decorative dessert plate with cocoa powder (or drizzle a pattern
with 1 tablespoon chocolate syrup). Place a cupcake (remove paper liner, if one
was used) upside-down on the plate. Spoon 2 tablespoons of the icing over the
cupcake. Gently press a pecan half on top of icing. Repeat with remaining
cupcakes and icing.
Note:
To toast pecans, place in a shallow baking pan and bake in a preheated 350°F oven for 6 to 8 minutes.

Try something different for dinner. These flavorful patties cook quickly for a meal in minutes, and they re-heat wonderfully for an even quicker meal the next day!

pound lean ground turkey

cup shredded carrots
2
green onions, thinly sliced
1/2
teaspoon lemon-pepper seasoning
1/2
teaspoon salt

egg

tablespoon olive oil
Combine all ingredients, except olive oil, in a
medium-bowl. Using your hands, mix until combined. Shape mixture into 12 mini
patties. Heat a large nonstick skillet over medium-high heat. Add olive oil and
swirl to coat bottom of pan. Add patties and cook for 4 minutes on each side, or
until cooked through. Serve with a dipping sauce of your choice on the side:

This
is a perfect “spooky” side dish to serve for Halloween. Long, curly pasta
noodles resemble worms in a stewed tomato and onion mixture. This quick and easy
dish---one of my favorites---is inspired by a dish that my grandmother often
prepared.

ounces dried fusilli pasta
2
tablespoons olive oil
1
large onion, thinly sliced
1
(14.5-ounce) can diced tomatoes with juices
Salt
and pepper to taste
1/4
cup shredded Parmesan cheese
Cook
pasta according to package directions; drain and reserve. In a large skillet on
medium heat, add olive oil and sauté onion for 4 to 5 minutes, or until tender.
Add tomatoes and salt and pepper to taste. Simmer for 10 minutes, until flavors
have blended. Add reserved pasta and cook for 2 to 3 minutes, or until warmed
through. Sprinkle Parmesan cheese over all and enjoy!
Notes:
Fusilli is basically spiral-shaped spaghetti and it is usually available in two sizes. Cut fusilli is 1 1/2 inches long. Fusilli lunghi is 10 to 12 inches long and is highly recommended for this dish to add to the dramatics of the presentation. For a spooky Halloween presentation, serve this in hollowed-out orange bell peppers that have been carved to resemble jack-o’-lanterns. Happy Halloween!
