Cooking with Herbs

(an excerpt from the Topic of the Month - Cooking Clips & Tips Volume 2, Issue 5)

Herbs can really make a difference in your cooking. Since ancient times, herbs have not only been prized for their culinary uses, but for medicinal purposes and to freshen the air as well. Herbs are quite easy to grow at home, but it is nice to know that many grocery stores now carry fresh herbs for everyone---even those without a green thumb---to experience the joy of cooking with fresh herbs.

When you use herbs and spices in your cooking, it is important to remember that they enhance the flavor, not mask it. Some foods are so delicate that using herbs can destroy the effect. If you are trying to cut back on salt, a touch of herbs can make all the difference in the world. You can really be creative by adding herbs to your everyday cooking, but do it gradually and get to know the flavor of each herb before you go on to the next. You'll gradually become familiar with the different tastes each herb lends, learn which foods appreciate a little extra flavor, and how much extra flavor you need to add. Always go light with herbs at first---you can always add more if you so desire.
