Arlington 13 cable show hosts join Carol to share festive holiday recipes.

Williams' Ranch Chili (from O.K. Carter)

This recipe has been a long-time favorite of wranglers working at the
Williams Ranch in Sweetwater, Texas (The Williams were O.K. Carter's
grandparents).

3 lbs. beef (a low fat, coarse ground sirloin or round mix works best)
15 oz. tomato sauce
1 medium chopped onion
1 clove garlic chopped (or sub 1 level tsp. garlic powder)
1 tsp. green Tabasco (red if green not available)
1 tsp. cayenne
1 heaping tbsp. crushed red pepper (optional)
4 heaping tbsp. chili powder
1 level tbsp. paprika
1 level tbsp. cumin
1 level tbsp. oregano
1 tsp. salt
2 tbsp. flour
Water

Sauté the onions, garlic and meat together until the meat is cooked. Drain
the fat. At low heat add the tomato sauce and two cans water with all other
ingredients EXCEPT flour. Simmer covered for an hour, but stir frequently.
Add flour and mix thoroughly. Simmer another half hour, adding slightly more
flour if a thicker mixture is preferred. The recipe serves six with goodly
portions, though this sometimes turned out to be a problem on the Williams
Ranch...the Williams clan had eight children.  

 

Dotty Woodson’s Cheese Log

1 pound sharp cheddar cheese
8 ounces cream cheese
1 to 3 cloves garlic
Chili powder

Bring all ingredients to room temperature.
Grate cheddar cheese.
Blend cheddar cheese and cream cheese in food processor.
Roll cheese blend into logs.
Roll logs in chili powder.
Wrap log in wax paper or aluminum foil.
Store in refrigerator.

 

Allan Saxe’s Strawberry Pecan Cookies

l box cake mix with no pudding added.
1/3 cup oil
2 eggs
1/3 cup pecans (optional)

Mix all 4 ingredients. Roll into a log if desired to freeze and bake at
later time. May also make cookies by teaspoonful onto cookie sheet. Bake for
12 to 15 minutes at 350 degrees. Then chew!


Andrea Abelson’s Holiday Decorated Cookies

 This recipe is taken from McCall’s Magazine the Dec. 1952 edition. My mom used to decorate the family tree with cookies, and this is one tradition we continue for a small "cookie tree".

3 1/4 cups sifted all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
2/3 cup shortening
2/3 cup sugar
2 eggs
1/2 teaspoon vanilla extract

Sift flour, salt, baking powder set aside. Blend shortening until creamy. Add sugar to shortening gradually and mix thoroughly. Stir in unbeaten eggs, vanilla extract and flour mixture until smooth. Chill in refrigerator-several hours. When firm, roll dough 1/4" thick on a lightly floured surface- cut out shapes with paper patterns, or cookie cutters.
Bake at 375 degrees for 7 to 8 minutes. Cool, and then remove from baking sheet.
Decorate with your favorite icing. To make decorations for your tree, you can arrange to hang them two ways. Either make a small hole with a toothpick in the unbaked cookie dough, then bake and use the small hole to run a ribbon tie through the cookie, Or frost the back of two cookies (same type!) and place the ribbon between the cookie backs, place them back to back, and then after this dries, you have your ornament ready to decorate and hang!

 

John Nelson’s Tortilla Soup

 This is really tasty around the holidays. I usually have chips and salsa with the soup, both the red and the Verde kind of salsa.


1 tablespoon of garlic powder

1 onion, chopped

4 cups of chicken broth

1 yellow squash (sliced)

1 zucchini squash (sliced)

1 can of Rotel

1/4 cup chopped cilantro

1 cup of diced potatoes

1 cup diced cooked chicken

1 cup sliced carrots

1 1/2 cups dry Sherry

Corn tortillas

(Add the Sherry last!)

 

Cheryl Nason’s Holiday Drink Recipes

Holiday Stress got you in its grasp?  Having trouble sleeping try this LULLABY POTION and A STRESS BUSTER

We have so many things on our minds during the holiday season, sometimes we have trouble sleeping.  We wake up in the wee hours of the morning and start thinking of all we have to do.  Here's a tip for dealing with those "holiday have to's!"

Get out of bed and go into the kitchen.  Find a piece of paper or pad.  As you do, assemble the following ingredients for a LULLABYE POTION:

1 mug of milk
1 tablespoon of brandy (optional)
4 almonds

Heat milk in the microwave or a small saucepan until steaming.  Do not let it boil
Stir in the brandy and the almonds.
Take a deep breath and feel your neck and shoulder muscles relax.
As you drink your warm drink, write on the paper all of the things you were thinking needed to be done.  Make sure you write down everything!
Eat the almonds in the bottom of the mug.
Look at the list you made and say "I can't do anything about any of this until morning."
Go back to bed, but don't tell yourself to go to sleep.
Instead, think, "If I just lie here and relax it is almost as good as going to sleep and I will feel fine in the morning."  Guess what will happen?  You'll nod right off.  The tryptophan in the milk is a natural relaxant.  Sweet dreams!

Feeling tired and have no energy!  Here's a recipe for an BOUNCE BACK SMOOTHIE that helps give you the energy you need to deal with all of the holiday "stuff!"

1 small banana
1/2 cup of orange juice
1/2 milk
ice cubes

Combine all ingredients in a blender and whip it up!  You'll get more energy from this drink than from a candy bar or soft drink.  It's healthier and contains much less sugar!  Drink your energy drink and get ready to go!
