#328 - Family-Style Theatre Night Meal

King Ranch Chicken

Serves 4

4 to 6 boned, cooked chicken breasts, diced

1 large onion, chopped

12 corn tortillas, quartered

1 cup chicken broth

1/2 pound cheddar cheese, grated

1 can cream of mushroom soup

1 can cream of chicken soup

1 can Rotel diced chilies and tomatoes

Lightly spray glass casserole dish with cooking spray. Mix chicken with onion and set aside. Dip tortillas in chicken broth to soften them. Line casserole pan with the tortillas. Add chicken and onion mixture to casserole.  Sprinkle cheese over the top of mixture. Mix the soups and Rotel together in a bowl and then pour over cheese in casserole. Bake uncovered at 350 degrees for one hour.

CCB Sauce

Serves 8

1/4 pound butter

2 1/2 cups powdered sugar

7 ounces can evaporated milk

6 squares unsweetened chocolate, shaved or grated

Mix all ingredients and place in double boiler. Cook at least 1/2 hour over medium heat, stirring often. Serve over CCBs (see note below).

Note: The fudge sauce is called CCB Sauce---so called because it was intended to be served over CCBs---Chocolate Crumble Balls. Chocolate Crumble Balls are simply vanilla ice cream balls, rolled in crushed Oreo crumbs.
