cups Pioneer Yellow Corn Meal 2/3
cup Pioneer or White Wings Flour 4
teaspoons baking powder 1
teaspoon salt 1
1/3 cups milk 2
large eggs, beaten 1/3
cup vegetable oil 1
can whole corn 1
small red pepper, finely diced 1
small poblano pepper, finely diced 1
tablespoon fresh jalapeno pepper,
finely diced 1
large onion, minced 1/4
cup fresh cilantro, minced 3
cups sharp cheddar cheese, shredded Preheat oven to 450ºF. Grease a 9 x 13-inch baking pan. Combine corn meal and all dry ingredients in a large bowl. Add milk, eggs and oil. Stir well. Fold in corn, peppers, onions, cilantro and cheddar cheese. Bake in a hot oven 25-30 minutes or until top is golden brown and toothpick inserted in the center comes out clean. Sausage & Cheese Party Snacks 2 cups Pioneer or White Wings Flour 1 pound sharp cheddar cheese, grated 1 pound breakfast sausage, uncooked Preheat oven to 325ºF. Lightly oil or spray a baking sheet. In a large bowl, knead all ingredients together. Shape into 1 1/2-inch balls. Place on baking sheet. Bake for 20-25 minutes. Serve hot. Pioneer-Style Chicken Fried Steak 1
1/2 pounds round steak, tenderized 1
cup Pioneer, White Wings or White Lily Flour 1
package Pioneer Brown Gravy Mix 1
teaspoon salt 1/2
teaspoon ground black pepper 2
large eggs, beaten 1/2
cup milk vegetable
oil for frying Heat 1/2-inch of oil in heavy skillet to about 365ºF. Trim steak and cut into 4 pieces. Combine flour, gravy mix, salt and pepper. Dredge steak pieces in flour mixture until lightly coated. Combine eggs and milk. Dip steak into egg mixture and dredge again in flour mixture. Place steaks in skillet and fry until golden brown on both sides. Serve with Pioneer Country Gravy. Warm Apple Pie Biscuit Pudding 6 day-old biscuits, broken into pieces and dried 1/2 cup butter or margarine, melted 2 cups brown sugar, packed 1 teaspoon grated orange peel 1 teaspoon ground cinnamon 1 can prepared apple pie filling 4 large eggs, beaten 2 cups half & half 1 teaspoon vanilla extract Preheat oven to 350ºF. Lightly grease 9 x 13-inch baking pan. In large bowl, pour melted butter over crumbled biscuit pieces. Add brown sugar, cinnamon and orange peel, stirring well to coat. Fold in prepared apple pie filling. Spread biscuit mixture into baking pan. Beat eggs, half & half and vanilla. Pour over biscuits, pressing down on biscuits to soak up liquid. Bake in a 350°F oven 45 minutes, or until center of pudding is set. Variations: Use fresh, sliced apples and increase cooking time to 60 minutes. Use cherries, blueberries or peaches in place of apples. Add walnuts, pecans, raisins or dried cranberries.
