Chocolate Fudge Coconut Layered Brownie Makes about 15 brownies Chocolate Brownie Layer: 10 ounces butter 2 1/2 ounces unsweetened chocolate, chopped 2 1/2 ounces semi-sweet chocolate, chopped 1 3/4 cup sugar 3 1/4 ounces all-purpose flour 1 teaspoon salt 1 ounce cocoa powder 1 cup egg, or 4 each, beaten Preheat oven to 350°F. In a 9" x 13" pan spray shortening to coat and line with parchment paper. Melt the butter and both chocolates in a double boiler. Add all of the dry ingredients to a mixing bowl. Add the chocolate mixture, remembering to scrape the sides while mixing. Then add the beaten eggs, slowly, until entire mixture is incorporated. Pour mixture into prepared pan and bake for 28 - 30 minutes, until just set. If you bake too long the brownie will become too caky. Cool and refrigerate. Coconut Layer: 14 1/2 ounces sweetened coconut, chopped fine 4 1/2 ounces Karo syrup 4 1/2 ounces cream 1 1/2 cups sugar In a food processor, chop coconut until fine. In a small sauce pan over high heat add Karo, cream and sugar. Bring to a boil and cook until candy thermometer reaches 230°F. Pour mixture over coconut and stir until completely incorporated. Cool for about 15 minutes then spread evenly over the brownie layer. Refrigerate for 2 hours and up to one week covered. Remove from the pan and slice into portions. Chocolate Espresso Sauce: 1 cup cream 1/3 cup sugar 1/3 cup corn syrup 12 ounces bittersweet chocolate, chopped 1/3 cup espresso In a medium saucepot over medium heat add espresso, cream, sugar and corn syrup. Bring to a boil and remove from heat. Stir in the chocolate until smooth. Store in the refrigerator until ready to use. Serve over Chocolate Fudge Coconut Layered Brownies for an elegant (and scrumptious!) presentation. |
