Carol's Cranberry Sauce Serves 4 - 6 1 cup water 1 cup sugar 1 (12-ounce) package cranberries, picked over & rinsed 2 teaspoons grated orange zest 1/4 cup orange juice Combine water and sugar in a saucepan and heat on medium until sugar dissolves. Bring mixture to a boil and do not stir for 5 minutes. Reduce heat to medium, add cranberries, and simmer, uncovered, for 5-10 minutes, or until sauce is thick. Skim top of sauce and add orange zest and orange juice; stir to combine. Cool and serve. Keeps in the refrigerator for up to a week. The 2 Guys' Mozzarella Salad Serves lots of people! Dressing: 1/2 teaspoon salt 1/2 teaspoon oregano 3 garlic cloves, minced 4 tablespoons white wine vinegar 1/2 teaspoon freshly ground pepper 1/2 cup olive oil 3 tablespoons grated Parmigiano Reggiano cheese Mix first 5 ingredients together with a wire whisk. Slowly whisk in olive oil until combined with other ingredients. Add Parmigiano Reggiano and set aside. Salad: 1 bunch each romaine, green leaf and red leaf lettuce, torn into bite size pieces 2 cups sliced black olives 1 cup sliced green olives 2 cups mozzarella cheese, torn or cut into pieces 4 plum tomatoes, sliced In a large bowl, mix together all ingredients. Pour dressing over salad. Sprinkle with additional Parmigiano Reggiano. Toss gently. |
