#255 - Comfort Home Cooking with Mom

Carol's mom, Ione Dixon, makes her debut appearance on Cookin' with Carol. Mom joins Carol to cook a couple homestyle favorites, and also shares a few stories and surprises!

Corn Flake Chicken

Serves 4

2 pounds chicken legs & thighs (bone-in)

3 cups corn flakes cereal

1/2 teaspoon salt

1/8 teaspoon pepper

1/2 cup milk

Rinse chicken under cold water and pat dry with paper towels. Preheat oven to 350° F. Put corn flakes, salt, and pepper in a zip-top plastic bag. Use your hands or a rolling pin to crush the corn flakes in the bag. Place crushed corn flakes mixture in a bowl. Lightly spray a 9" x 13" baking dish with vegetable oil spray. Dip chicken pieces in milk, then in corn flakes, turning to coat. Place chicken in the baking dish. Sprinkle any leftover corn flakes on top of chicken. Bake, uncovered, for 1 hour, or until chicken is cooked through.

Notes:

You can substitute 1 pound boneless chicken breasts. Drizzle top of coated chicken breasts with 2 tablespoons melted butter or margarine before baking to help keep chicken moist. Cook for 40-45 minutes, until no longer pink in the center.

Broccoli & Cauliflower Casserole

Serves 8 as a side dish

3 cups broccoli florets

3 cups cauliflower florets

2 tablespoons butter

2 tablespoons flour

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup milk

1 cup shredded Swiss cheese

2 cups bread cubes covered with 3 tablespoons melted butter

In a large saucepan or small stockpot, steam broccoli and cauliflower in about 2 cups water until tender-crisp, about 6-8 minutes. You can microwave the vegetables instead-use a microwave-safe dish, add a small amount of water, and microwave on high for 2-3 minutes. Drain water and place vegetables in a 9" x 13" baking dish; set aside. Melt butter in a saucepan. Add flour, salt, and pepper. Cook for 1-2 minutes, stirring occasionally. Add milk and cook on medium-high until thickened and bubbly, about 3-4 minutes. Reduce heat to medium-low, add cheese, and stir until melted, about 1-2 minutes. Pour sauce over vegetables in baking dish. Top with buttered bread cubes and bake casserole at 350° F for 30 minutes.
