#250 - Katie Brown Entertains

Katie Brown, star of Next Door with Katie Brown on Lifetime TV and author of "Katie Brown Entertains," brings all sorts of dinner table decorating ideas to Carol's kitchen in this entertaining episode. Katie grew up in Michigan (as did Carol) and spent much of her life on Mackinac Island, near the Mackinac Bridge, between Michigan's Upper and Lower Peninsulas. One of her favorite places is the Grand Hotel on Mackinac Island, so with Carol's assistance, she also shares one of her favorite recipes from the island. Grand Hotel Pecan Balls with Fudge Sauce

Serves 6

1 quart vanilla ice cream

2 cups roasted pecan halves

1 pint heavy cream

1/2 cup sugar

2 cups (16-ounce bottle) light corn syrup

1 pound chocolate chips

1 tablespoon vanilla extract

1 tablespoon crème de cacao

For the balls: Line baking sheet with parchment paper. Scoop ice cream into a ball about the size of a baseball, perfecting the shape by rolling between your hands. Roll each ball in the roasted pecan halves until well coated on all sides and place balls on the baking sheet. When all balls are created, place in the freezer. For the sauce: Combine the cream, sugar, and corn syrup in a sauté pan. Bring to a boil. Remove from heat and stir in the chocolate chips, vanilla extract, and crème de cacao. Let cool. To serve, cover the bottom of a plate with approximately 1/4 cup of sauce and place the pecan ball in the center of the sauce. Hints and Clues: Make sure the ice cream is very cold before you begin. At times you will have to push the pecans into the ball to make them stick. If you cannot get roasted pecans, place pecans on a baking sheet in a 350° F oven for 6 to 10 minutes.
