#234 - Making Pizza with Mr. Jim's

Carol's Simple Pizza Dough

Makes 1 pizza - Serves 4

1 cup warm water (105° - 115° F)

1 package (2 1/2 teaspoons) active dry yeast

1/2 teaspoon sugar

3 - 3 1/2 cups all-purpose flour

2 tablespoons vegetable (or olive) oil

1/2 teaspoon salt

Measure warm water into a large bowl. Sprinkle yeast over warm water, add sugar, and stir well. Let stand 5 minutes. Add 2 cups flour, oil, and salt to the yeast mixture. Stir until mixture forms a smooth dough. Turn dough out onto a floured board. Knead in enough of the remaining flour to form a dough that is smooth and elastic, about 5-8 minutes. Place dough in a lightly greased bowl (olive oil is recommended for flavor), turning to coat. Cover and let rise until doubled in size, about 1 hour. Punch dough down and let rest for 5 minutes. Roll out dough into a circle 12 to 15 inches, depending on the size of your pizza pan. Place dough on pizza pan and top with your choice of pizza sauce (or any tomato sauce, about 1 cup), mozzarella cheese (about 2 cups, shredded), and other pizza toppings (see ideas below). Bake in a preheated 450° F oven for 12-15 minutes, until crust is golden and cheese is melted. Serve hot.

Pizza topping ideas: pepperoni, sausage, hamburger, Canadian bacon, shaved ham, mushrooms, green bell peppers, onions, olives, tomatoes, pineapple, jalapeņo peppers, red pepper flakes, Parmesan cheese.

Note: You can opt to mix the pizza dough in a food processor. Simply combine ingredients in food processor bowl (start with 2 cups flour) and process---adding additional flour as necessary---until dough forms a ball that is not-too-wet and not-too-dry, about 1-2 minutes. Allow dough to rest 1 hour as described above and continue with recipe.

Pizza Ideas by Mr. Jim's

Preparing the Dough - Once the dough is rolled out to a pizza-shape circle, use a large-tined fork or similar utensil to poke holes in the dough. This keeps the dough from forming air-pockets which could cause burnt spots on the pizza. Preparing the pizza dough this way just before adding the toppings will allow to pizza to cook evenly.

Pizza Rolls - Prepare dough as usual and roll out to a circle. Place ingredients, such as pepperoni and cheese, in four places around the edge. Cut pizza into four even pie-slices (with ingredients on each piece). Roll dough around filling burrito-style and bake in a preheated 450° F oven for 10 minutes, or until golden.

Cheese Garlic Sticks - Prepare dough as usual and roll out to a circle. Top with garlic butter (available in most groceries or make your own by adding a few cloves of minced garlic to a stick of butter, mixing well to combine) and mozzarella cheese. Bake in a preheated 450° F oven for 12 minutes, or until golden. Cut into "sticks" to serve.

Bread Buds - Similar to Cheese Garlic Sticks, however, dough is rolled and then cut into sticks before baking (without toppings). Dip in melted garlic butter, pizza sauce, or ranch-style dressing to serve.

Pitas - Smaller portions of pizza dough can be shaped into small circular "loaves", baked, cut in half, and stuffed with your favorite sandwich ingredients.
