#233 - Cooking Made Easy by The Kitchen Store

Shae Harkey, Owner of The Kitchen Store, a gourmet kitchen accessories (and much more!) store in Arlington, Texas, joins Carol to show-off just a few of the countless kitchen utensils and gadgets stocked in the Cookin' with Carol kitchen (and always available at The Kitchen Store). Shae also shares some favorite recipes she enjoys cooking with her husband, Jack. Jack's Soup

Serves 4

1 (15-ounce) can chicken broth

1 (15-ounce) can water

3/4 cup mushrooms, chopped

1 bunch green onions, chopped

1/2 bunch (or less) spinach, torn

salt to taste

2 eggs, beaten

In a 3-quart saucepan add chicken broth, water, mushrooms and green onions. Simmer for 30 minutes. Add spinach and simmer until wilted. Take off heat. While stirring, slowly pour in eggs. Serve hot.

Jack's Bacon Avocado Sandwiches

(Serves as many as you have ingredients for)

whole-wheat bread, toasted

4 - 6 slices crisp cooked bacon (per sandwich)

1/2 avocado, sliced (per sandwich)

lettuce

tomato

mayo

salt to taste

Just pile it on!
