Peaches' Famous Brisket

Serves 14 - 16

1 1/2 - 2 tablespoons TexJoy steak seasoning

2 teaspoons onion powder

2 teaspoons garlic powder

8 pounds beef brisket

2 tablespoons Worcestershire sauce

In a small bowl, combine the TexJoy steak seasoning, onion powder, and garlic powder. Sprinkle half of this mixture over the top of the brisket. Turn over and rub the remaining amount on the other side of the brisket. Place brisket in a large Reynolds oven bag (plastic bag designed for cooking) or a large Reynolds Hot Bag (foil bag designed for cooking) and place in a large, shallow baking pan. Pour the Worcestershire sauce into the bag and seal (if using the plastic oven bag, cut a few slits into the top of the bag to vent). Bake wrapped brisket in a preheated 250° F oven for 5 1/2 to 6 hours, or until meat is tender. Open bag carefully (steam can burn), let brisket cool slightly and slice to serve.

Stewed Rhubarb and Strawberries

Serves 6

1/2 cup orange juice

1/4 cup sugar

2 cups sliced rhubarb

1 cup sliced strawberries

1 teaspoon lemon zest

additional sugar to taste

In a medium saucepan, combine orange juice and sugar. Heat on medium temperature, stirring occasionally, until sugar is dissolved, about 2-3 minutes. Add rhubarb and cook, covered, over low heat for 6-8 minutes, until rhubarb is tender. Add strawberries and lemon zest and cook over medium heat for 2-3 minutes, stirring occasionally, until strawberries are warmed through. Taste and add sugar, 1 teaspoon at a time, if mixture is too tart for your liking. Serve warm over ice cream, shortcakes, or with shortbread cookies.

Bill Miller's Super Burgers

Serves 8 - 1 burger servings

1 carrot

1 stalk celery

1 bell pepper

1/2 onion

2 pounds ground sirloin

salt & pepper to taste

Finely chop carrot, celery, bell pepper, and onion (a food processor works well for this). Place vegetables in a medium bowl with the ground sirloin and salt and pepper to taste. Using your hands, thoroughly combine mixture and shape into eight hamburger patties. Grill over medium-high heat for 4-6 minutes on each side, until burgers are no longer pink in the middle (165º F internal temperature). Serve super burgers on hamburger buns with your choice of condiments, or serve burger patties on rice with gravy spooned over the top.
