#218 - Women & Heart Health

Suzy Lundquist, vice president (and president-elect) of the Arlington American Heart Association board of directors, public relations director at Arlington Memorial Hospital, and host of Arlington 13's "Health & You" program stops by with Gay Farnsworth, president of the Arlington American Heart Association board of directors to talk with Carol about the "Women & Heart Health" conference, held every year in Arlington.

Chicken Soup with Tomatoes, Corn & Black Beans

Serves 4

2 cups chicken broth

15 oz. can stewed tomatoes

15 oz. can black beans, rinsed & drained

1 cup corn

1 cup diced cooked chicken

1 tsp. ground cumin

Combine all ingredients in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium-low and simmer for 10-15 minutes, stirring occasionally. Serve warm.

Mango Salsa

Serves 4

1 mango, peeled, seeded & diced

1 serrano chile pepper, seeded & chopped

2 Tbs. chopped red onion

2 Tbs. lime juice

1 Tbs. fresh cilantro leaves

Combine all ingredients in the bowl of a food processor, fitted with the metal blade. Process until blended and only slightly chunky, about 5-10 seconds. Serve immediately or chill before serving. Makes about 1 cup salsa.

Fruit Tostadas

Serves 4

8 mini flour tortillas

2 Tbs. sugar

1 tsp. ground cinnamon

8 oz. lowfat vanilla yogurt

2 cups sliced fresh fruit

Preheat oven to 375° F. Place tortillas on a baking sheet and spray lightly with vegetable oil spray. In a bowl, mix sugar and cinnamon. Sprinkle over tortillas. Bake for 10-15 minutes, until crispy. Remove from oven and allow to cool. Spread about 2 tablespoons yogurt over each tortilla. Arrange about ¼ cup fruit on top of each tortilla. Serve and enjoy!
